Bottling:

Date: 05/17/2008
Sugars Amount
wheat DME 5/8 cup
corn sugar 3/8 cup
starter: (wednesday) smacked cold smack pack late afternoon: the starter (that night): 1 cup wheat DME, 20 oz water, 10 minute boil (pellets/water/DME), cooled down to 72° (room temp is 70°), shook up (lidded), mixed w/125ml Wyeast 1084 Irish Ale XL (Feb 4, 2008 might be the mfg. date -- not readable) into sanitized 32oz jar, cap with fermentation lock (sanitized), basement temp is 64° Preparing T bath. Boiled 3 gallons of water.
brewday: basement temp 64°, wort 70°. Grains varied from last batch as I decided to use up what I had around. Melted the chocolate in the microwave this time. Had less stick to the bottom of the pot, and more in suspension. Much of which was trapped by the strainer when I poured the wort into the fermentation bucket. Letting some water warm up to room temp in case I decide to start a T bath tomorrow. Basement is cool because the ground is, and the furnace is mostly off.
next day: have fermentation, but basement is so cold, and it seems a bit sluggish. Got Tbath going, about 70°. More certain tomorrow.
brewday: only 40+4. Not sure why I didn't get 1 or 2 more more. Too much down the drain? Leftovers tasty.

The recipes described indicate the ingredients I used to brew the beer. These may or may not match with the ingredients found in the cited references. For the authoritative clone recipe and complete descriptions of how to make any of these beers using either extract, mash or mini-mash methods consult the cited text. I heartily recommend the "clone" books referenced, any of them is well worth the small investment and will pay off in great beer.
