corn sugar 3/8 cup
starter: (wednesday) removed and smacked smack pack from fridge: 1 cup wheat DME, 20 oz water, some hops 10 minute boil (pellets/water/DME) , cooled down to 78° (room temp was 77°), shook up (lidded), mixed w/ Wyeast 1338 Euro Ale XL Activator completely bulked out Smack Pack (June 21 mfg. date) into sanitized 32oz jar, cap with fermentation lock (sanitized), dark place -- basement temp is 75° will use half, save half for another brew
brewday: slight mods to recipe (grains, malts, hops), check before making again, these were because of "what was on hand" as opposed to any purposeful modifications. Basement temp 74°
rackday: skimmed off a bunch of yeasty foam
next day: the foam has re-established itself. May need an extra week in the carboy
2nd rack: a fair amount of fermentation took place in the carboy, in lieu of bottling this week re-racked. Pleasant aroma.
bottling: 41+4. leftovers very tasty
