starter: (wednesday) AM: removed smack pack from fridge: after work: smacked smack pack: the starter: 1 cup wheat DME, 20 oz water, challenger and tettnanger hops (mostly dust), 10 minute boil (pellets/water/DME) , cooled down to 71° (room temp was 75°), shook up (lidded), mixed w/125ml Wyeast 1084 Irish Ale XL completely bulked out Smack Pack (April 26 mfg. date) into sanitized 32oz jar, cap with fermentation lock (sanitized), dark place -- basement temp is 71° -- plan to let this go for 3 days and brew w/half, save half (pre-bottling yeast kicker).
decided to try some semi-sweet chocolate in this brew
brewday: pitched at 73°, basement at 75°
brewday+1: looks like a successful start -- after about 12 hours fermentation was visible
rackday: a thicker film than usual on the sides of the bucket, perhaps from the chocolate
bottling: 40 regular, 4 large. leftovers good, should be tasty

The recipes described indicate the ingredients I used to brew the beer. These may or may not match with the ingredients found in the cited references. For the authoritative clone recipe and complete descriptions of how to make any of these beers using either extract, mash or mini-mash methods consult the cited text. I heartily recommend the "clone" books referenced, any of them is well worth the small investment and will pay off in great beer.
