basement temp is 68° on brewday, set T bath to about 72°, another gassy yeast vial, also a cm-ish lump of yeast dropped out (though i shook the vial pretty thoroughly first), so i stirred up the wort again after pitching
visible signs of fermentation by morning (about 15 hours), by evening vigorous gurgling, by the next evening foamage, moved to blowoff system at that point, cleaning racking tube thrice per day, lots of yeast being pushed through [3rd day of fermentation]
stopped cleaning rack tube on 4th day, replaced w/fermentation lock on 5th, minor gurgles persist on 6th
lots of gunk (yeast?) on top during rack, a fractal creamy skim, probably could have pulled two more beers worth out of the rack, could not see the bottom for the skin, guessed perhaps a bit early when to leave the rest, topped off (as usual) with some chilled pre-boiled water left over from brew day
one week after rack: a 1/2 cm foamy skim has developed
i let this go an extra week before bottling as it still seemed unsettled and possibly active (gassy,suspended particulate matter)
bottling: 50 bottles, leftovers flavorful, but on the sweet side:i hope this was not because i only stirred at the beginning and ending of the rack and thus failed to equitably distribute the sugars:gas report to come :)
the gas is good after 2 weeks, rather sweet at this stage, maybe it needs some age
