First time I made this I claimed to use 2 oz Hallertau bittering hops. This is not in the recipe. Not sure if I really put it in then or not (check notes). This time I did not.
Using temp control set to 69°, basement is about 65°
Temp was at 73° for about the first 24 hours. Then I was able to keep it at 70° for the rest of the fermentation. Not sure if it was high initially because of the initial stages of the fermentation, or because the heater overshot its target while advancing from about 55° and its programming kept it there. I turned it off and when the beer was at 69° turned it back on. Stabilized.
Too frequently carbonation has been slow or uneven. This time I decided to mix in 1/2 the usual corn sugar w/ 1/2 the usual DME to see how it goes. I also made sure I frothed the sugar mixture by turning the stove onto high for a minute or so.
Carb just fine after 2 weeks. This beer rocks! Very good. Must ... make ... again.
